Peppermint Ice Cream ( Almost Raw)


3 Cups Coconut Milk (meat and water form a couple young Thai coconuts) you can used canned coconut milk as transition.
¼ cup lakanto sweetener  (xylitol or stevia can also be used)

2 Teaspoons Peppermint Extract ( or a handful of mint leaves).
1 Tablespoon Coconut oil

Blend in blender. Freeze and blend again every few hours. Or simply use your ice cream maker.


In blender blend 2 cups flaked coconut ( I like the big flakes), 2 cups sesame seeds,  ½-1 2 tblsp of hemp protein, 2 tblsp of chia seeds, (or xylitol) ½ cup of sunflower seeds, ½ cup pumpkin seeds, and lakanto or xylitol to sweeten  Taste while you sweeten to make it to your liking).

This is a base recipe for cookies. You can add other supplements to them like algae (just remember that the ones you add supps to are MEDICINE…..:) I have added marine phytoplankton, other protein powders, quinoa flakes, kefir pudding etc.
